2 cups fresh or frozen blueberries
1/4 cup sugar
1 Tbsp. cornstarch
3/4 Cup maple syrup
1 Tbsp. butter
2 Cups pancake mix
1 egg, beaten
2 Tbsp. canola oil
1 pkg. Swiss Meats Maple Syrup Breakfast Sausage
In a small saucepan, combine sugar and cornstarch with 1/2 cup water and the 2 cups of blueberries. Bring to a boil. Cook and stir until thickened. Stir in maple syrup and butter; set aside and keep warm. Combine 1 cup water with pancake mix, egg and oil. Pour into a greased 13-in. x 9-in. baking dish. Brown the sausages in a skillet and arrange on top of the pancake batter. Pour the blueberry mixture over the top and bake, uncovered, at 350 degrees for 30-40 minutes.
