Blind Hen

4 large Carrots, scraped and cubed

1-2 Onions, sliced

½ lb. Green Beans, broken

1/3 cup Sugar Cured Hickory Bacon, cooked and chopped

2-3 Apples, peeled and sliced

2 tbsp. Vinegar

1 tbsp. Sugar

Salt to taste

Cook carrots and beans in salt water until almost tender, drain. Saute bacon until crisp. Remove from pan, reserve drippings in 

pan, add onions and cook till soft. Add apples, sugar, vinegar, carrots, beans, and chopped bacon. Cook covered until vegetables are tender. Salt to taste.
