Cauliflower In White Sauce

1 medium-sized Cauliflower

3 tbsp. Butter

3 tbsp. Flour

1 tsp. Ground Nutmeg

1 tbsp. Lemon Juice

1 tsp. Salt

1 Egg Yolk

Remove leaves from Cauliflower and trim, removing blemishes and stem. Soak in cold, salted water. Cover and cook until tender, 15-20 minutes. Remove and reserve 2 cups of cooking water for white sauce. Melt butter in a saucepam, add flour and stir until browned. Gradually add reserved warm cooking water, stirring constantly. Simmer for 10 minutes. Season with nutmeg, lemon juice, and salt. Stir in egg yolk just before serving. Pour sauce over cauliflower and serve.
