Company Carrot Casserole

1 small Onion, minced

¼ cup melted Butter

¼ cup All Purpose Flour

1 tsp.  Salt

¼ tsp. Pepper

2 cups Milk

4 cups sliced Carrots, cooked and drained

6 slices American Cheese

2 cups buttered fresh Bread Crumbs

Saute onion in melted butter. Stir in flour, salt, and pepper. Gradually add the milk, stirring constantly. Arrange a layer of carrots in a 2 quart casserole. Place 3 slices of cheese over carrots. Repeat layers. Pour sauce over carrots. Top with crumbs. Bake at 350°F uncovered for 25 minutes. Serves 6-8.
