Fried Cabbage with Bacon and Onion

1 lb. Sugar Cured Hickory Bacon

1 medium Onion, chopped

2 lbs. Cabbage, chopped

1/4 tsp. Red Pepper Flakes

1/2 tsp. Salt

1/2 tsp. Black Pepper

Fry bacon until crisp. Drain and set aside. In pan drippings, add onion and cook until translucent. Add cabbage, pepper flakes, salt and pepper, stirring until all cabbage is coated. Add the crumbled bacon bits, cover and cook over low heat until cabbage is tender. Optional: add 2-3 pinches of sugar while this is cooking to help bring out the flavor.
