Grilled Stuffed Sweet Potatoes
1 - 28 oz. Country Style Baked Beans
4 medium Sweet Potatoes
2 medium Peaches, sliced and diced
1/2 cup Onion, diced
4 slices Honey Cured Hickory Smoked Bacon, cooked and crumbled
Salt and Pepper to taste
Wash potatoes and pierce skin several times with a knife. Place potatoes on paper towels and microwave on high power for 10 minutes or until soft. Cut eight pieces of heavy duty aluminum foil that are about 12 inches square. Slice each potato in half and scoop out a small portion of the potato to make a narrow boat, reserving the scooped out potato. Place on potato half on each foil square. Mix baked beans, peaches, onion, bacon and reserved sweet potato into a bowl and season with salt and pepper to taste. Place the mixture in your potato boats. Bring up the top and bottom edges of the foil, leaving a little space for steam expansion during cooking. Seal potatoes in foil and place on grill. Cook for 20 minutes over indirect heat, or until warmed thoroughly.
