Red Cabbage Swiss Style

1 head Red Cabbage

1 cup Boiling Water

2 large Apples, peeled and chopped

1 medium Onion, chopped

1/2 cup Sugar

1 tsp. Salt

1/2 tsp. Pepper

1/2 cup Apple Cider Vinegar

1/4 cup Bacon Drippings

6 slices Sugar Cured Hickory Smoked Bacon, cooked and crumbled

Shred the cabbage until medium fine and cook in a large pot with 3/4 boiling water. Cook for 10-12 minutes then add the apples and onion and cook for an additional 10 minutes. Lasty add the sugar, salt, pepper, vinegar and bacon drippings. Crumble the cooked bacon into the cabbage and cook just long enough to heat thoroughly. Add more water if needed.
