Summertime Rice Salad

1½ cup Water

1½ cup Minute Rice

½ cup Chopped Celery

¼ cup Chopped Dill Pickle

1 tbsp. Chopped Onion

1 tbsp. Chopped Parsley

½ tsp. Dry Mustard

1 cup Mayonnaise

Bring water to a boil in saucepan. Stir in rice/ Cover, remove from heat, and let stand 5 minutes. Add celery, pickle, onion, parsley and mustard. Mix well. Add mayonnaise, and chill about 1 hour. Serve on crisp lettuce. Garnish, if desired, with hard- cooked Eggs sliced or olives. Makes 6 servings.
