Apple Cinnamon Sausage Pancakes
Pancake Ingredients
2 large eggs
1 cup milk
2 cups pancake mix
1 Tbsp. ground cinnamon
3 Granny Smith apples, peeled and grated
Toppings Ingredients
1 lb. Swiss Meats Apple Cinnamon Sausage
1/4 cup butter
3/4 cup brown sugar, packed
1/4 cup honey
1/2 tsp. ground cinnamon
2 1/2 cup Grany Smith Apples, peeled and cubed
1/4 cup apple butter
cornstarch to thicken if needed
Cook sausage on a 15” x 10” baking pan at 375 degrees for 15 - 20 minutes or until sausage is no longer pink, turning once; drain and slice into 1/2” pieces. In a saucepan, melt butter; stir in brown sugar, cinnamon and ho-ney. Bring to a boil, stirring constantly. Cook and stir for 1 minute. Add apple cubes and apple butter. Return to a boil. Reduce heat; simmer, uncovered for 3 - 5 minutes or until apples are tender. Add sausage; heat through. Thicken with cornstarch if the topping is too runny. Remove from heat and keep warm.
In a bowl, beat eggs and milk; stir in pancake mix and cinnamon just until moistened. Fold in grated apples. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on the top. Cook until second side is golden brown.
Serve apple cinnamon sausage topping over pancakes.
