Black Bean Soup with Smoked Pepper Cheese Bratwurst

1 lb. Swiss Meats Smoked Pepper Cheese Bratwurst, sliced
3 cloves garlic, minced
2 15 oz. black beans
1 14.5 oz. diced tomatoes
2 tsp. lime juice
¼ tsp. red pepper flakes
1 whole yellow pepper, diced

In a large saucepan, brown the Smoked Pepper Jack Bratwurst slices with the minced garlic. Add the black beans, tomatoes, lime juice and red pepper flakes. Bring to a boil, then lower the heat and simmer for 15 minutes. Garnish with the diced yellow pepper when serving. If you desire serve topped with sour cream, jalapeno slices or lime wedges.

Serves 6.
