Braised Beef Short Rib Surprise

3 lbs. Beef Short Ribs

3 oz. (about 4 slices) Swiss Meat Hickory Cured Bacon

1 cup Dry Sherry

1 Onion, chopped

2 cloves Garlic, chopped

2 oz. Bittersweet Chocolate

5 sprigs Thyme

2 tbsp. Flour

1 Cinnamon Stick

2 Bay Leaves

Salt & Pepper

Salt and Pepper ribs heavily. Brown bacon. Sear ribs in bacon grease. Add onions, cook for 5 minutes. Add garlic and saute for 2 mintues. Add flour, cook for 2 mintues. Deglaze with sherry. Add remaining ingredients and cook on low for 1.5 hours with the lid on.
