German Style Mashed Potates

5 lbs. Red Potatoes, peeled and cubed

2 large Tart Apples, peeled and chopped

1 lb. Applewood Smoked Cinnamon Bacon, diced

2 medium Onions, sliced

3 tbsp. Sugar

3 tbsp. Apple Cider Vinegar

2 tsp. Salt, or to taste

Place potatoes in a large saucepan and voer with water. Bring to a boil. Reduce heat; cover and cook for 10 minutes. Add apples; cook for 10 minutes. In a large skillet, cook diced bacon over medium heat until crisp. Remove bacon and put on plate lined with paper towels, reserve 1 tablespoon drippings. In the bacon drippings sauté onions until lightly browned. Drain potatoes and apples. Add sugar, cider vinegar, and salt; mash slightly. Transer to a serving bowl. Top with onions and bacon.
