Potato Salad

Dressing:

Boil Together:

¾ cup Vinegar

¾ cup Water

2 cups Sugar

Beat together very well;

6 eggs

½ tsp. Salt

3 tbsp. Flour

2 tbsp. Butter

Mix with equal parts of Mayonnaise

Potato Salad Ingredients:

5 lbs. Potatoes, cooked whole then sliced

½ cup Chopped Onion

½ cup Chopped Celery

Diced Pimento

6 Hard Boiled Eggs, peeled and diced

6-8 slices Hickory Smoked Sugar Cured Bacon, cooked and crumbled.

Beat eggs, salt and flour well again and stir into boiling mixture. Boil until thick, stirring constantly. Add 2 tbsp. butter. Beat well. Mix with equal amounts of mayonnaise and let cool. This makes about 1 quart of dressing. It keeps well in Refrigerator. Add to sliced cooked potatoes, onion, celery, pimento, eggs and bacon. It also is good on Macaroni Salad.
