Sausage and Tortellini Soup
1 lb. Swiss Meats Sweet Italian Sausage
1 medium onion, chopped
4 stalks celery, chopped
8 cups chicken broth
28 oz. tomato, crushed
3 cloves garlic, minced
2 tsp. basil
1 tsp. oregano
1 bag 3-cheese tortellini, fresh, frozen or dried
1/4 cup parsley, chopped
salt and pepper to taste
Remove the sausage from casing, crumble and brown in large stockpot. Sauté the onion and celery until sof-tened. Add the chicken broth and tomatoes. Bring this mixture to a boil, add the seasonings and simmer for 1 hour over medium heat. Bring this back to a fast boil, add the tortellini and cook according to the package directions or 30-40 minutes.
Sprinkle generously with Parmesan cheese when serving.
