Sautéed Sweet Peppers and Onion Sausage
16 oz. Swiss Meats Smoked Sweet Pepper & Onion Bratwurst
2-3 Tbsp. olive oil
2 cloves garlic, crushed
1 med. red pepper, julienne-stripped
1 med. yellow pepper, julienne-stripped
½ med. onion, julienne-stripped, optional
1 28 oz. diced tomato with Italian seasonings
salt and pepper to taste
2 cups provolone cheese, shredded
Grill the Bratwurst, or cook in a skillet until browned on all sides and has an internal temperature of 145 degrees. Bias-cut the bratwurst into bite size pieces. In a large pan, heat the olive oil and sauté the garlic for about 30 seconds. Add both peppers and onion then sauté for about 2 more minutes or until crisp tender. Add the diced tomatoes and sausage, heat about 5 more minutes. Salt & pepper to taste.
Serve with crusty rolls or garlic bread.
